WORKING METHOD:

HARVEST PERIOD: end September, vinification with cold settling of the must and further fermentation at 16° C (61 ° F) for about 10 days. After being poured for the first time the wine undergoes the assembly of its varieties then rests on its lees, until bottling.

COLOR: straw-yellow with golden reflections.

PERFUME: intense and fruity, with bouquets of ripe white pulpe fruit.

TASTE: fresh and elegant, extremely easy to drink, tasty.

Vinification with cold static cleaning of the must and further fermentation at 18°  C (64 ° F) for about 10 days. After leaving to decant, the wine rests on its lees, until bottling.

HARVEST PERIOD: fourth week of September.Vinification in steel vats with a 20% bleeding and four pumpings a day for an overall 10-day maceration period. Before bottling the wine ages for 6 months in steel vats where malolatic fermentation occurs.

COLOR: deep ruby red.

PERFUME: fruity, with slightly spicy notes

TASTE: mellow, elegant, the taste lingers

HARVEST PERIOD: from the beginning until the end of September, grapes are harvested depending on their aging and Once in the cellar they are pressed and stemmed. Alcoholic fermentation follows at a monitored temperature with aimed pressing and pumpover. After the alcoholic fermentation the malolactic one occurs. After being decanted for the first time the wine’s varieties assemble and it is in contact with its lees until it is prepared for bottling.

COLOR: intense ruby red.

PERFUME: intense and scented, with bouquets of ripe red pulp fruit.

TASTE: warm and elegant, easy to drink, marked by its fruity flavor. It also has a pleasant spicy note.

MATCHING: rich first courses, braised and roasted red meat.

Poggio Cavallo “Rosso Orvietano” grapes are harvested on the same land where the Etruscans produced their primordial wines, on the slopes in the Orvieto area. This elegant, smooth and velvety wine has a marked roundness and its strong taste and scent are made possible by its volcanic and well exposed land, which also allows the aging of the different grapes necessary for the production of this DOC wine.

 

 

 

CABERNET FRANC

Vinification in steel vats with four pumpings a day for an overall 14-day maceration period. Before bottling the wine ages for 12 months in wooden barrels of first and second pass. The wine is sold after six months.

TASTE: mellow, elegant, the taste lingers
