INFORMATION ON THE WORKING METHOD:

HARVEST PERIOD: end September.

Vinification with cold static cleaning of the must and further fermentation at 18°  C (64 ° F) for about 10 days. After leaving to decant, the wine rests on its lees, until bottling.

PERFUME: intense and fruity, with bouquets of apricot, white fruit, floral

TASTE: fresh and elegant, easy to drink, with a strong flavor

The lush fruit from a five-acre olive grove on the estate yields an extra-virgin oil of extreme finesse.

HARVEST PERIOD: fourth week of September.Vinification in steel vats with a 20% bleeding and four pumpings a day for an overall 10-day maceration period. Before bottling the wine ages for 6 months in steel vats where malolatic fermentation occurs.

COLOR: deep ruby red.

PERFUME: fruity, with slightly spicy notes

TASTE: mellow, elegant, the taste lingers

Vinification in steel vats with four pumpings a day for an overall 14-day maceration period. Before bottling the wine ages for 12 months in wooden barrels of first and second pass. The wine is sold after six months.

WORKING METHOD:

HARVEST PERIOD: end September, vinification with cold settling of the must and further fermentation at 16° C (61 ° F) for about 10 days. After being poured for the first time the wine undergoes the assembly of its varieties then rests on its lees, until bottling.

COLOR: straw-yellow with golden reflections.

PERFUME: intense and fruity, with bouquets of ripe white pulpe fruit.

TASTE: fresh and elegant, extremely easy to drink, tasty.
